Courgette and Cheese Nuggets

5 down - no more to go!



A newspaper editor wrote about his hate of courgette harvest time in summer. Everywhere he went he was offered some of the green or yellow veg. The tasteless veg was his personal horror.
Then he came across this Nuggets. These changed his opinion.



Recipe for 2 as a starter:
400 g courgette, 1 spring onion, 1 egg
1 cup breadcrumbs
2 tbsp dill, salt and pepper
6 slices American processed cheese or I used French Aperi Cube Emmenthal flavour

Dip:
Greek yogurt, lemon juice, dill, salt and 



Preheat the oven to 180 C fan.



Use a box grater for the courgette and then press out the water.
Put in a bowl and add fine chopped onion, dill, egg, seasoning and breadcrumbs. Cut up the slices of cheese or unwrap the cubes of cheese.


Use a fork or a potato masher and make a nice batter.



On baking paper place scoops of batter and bake them for 30 min, turning them over after 20 min.
 
Serve with the dip.
