Korean Spicy Cold Noodles- Bibim Goksu

Some warm September days are calling for cold noodles. I saw different versions on YT but decided on a recipe I found on Pinterest by Cookerru.



I made it for my own spice tolerance level. Pretty spicy, it kept my nose running for a little time. You have to adjust the spices to your own comfort level.



The fresh cut cucumber slices and a tomato helped to cool down the burn.

Somen Noodles are used. These are very thin wheat noodles. They just need 2-3 min to cook. Wash them in cold water after cooking to get the starch out and firm them up.



Drizzle with a little sesame oil to prevent them from becoming a glob.



Dressing:

2 tbsp Gochujang, 1 1/2 tsp Gochugaru pepper flakes

1 tbsp syrup, 1 tsp toasted sesame seeds

1 clove of garlic grated, 1 tbsp light soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil

Garnish:

Cucumber, boiled egg, spring onion, tomato and all other veggies you like to eat, add some more sesame seeds and hot pepper flakes on top.
