Oven Baked Filled Gnocchi

A quick fixed lunch during a day working from home. Needed time in the kitchen is 7 minutes. 2 store bought produce, one home made out of the freezer and some fresh veggies. During the baking time, just work a little more at your office desk.



First thing first - preheat your oven to 170C.



Earlier in the morning get the frozen stuff out to defrost, then just reheat it in the microwave for 3 min. I used up some tomato sauce.

There was an add for a new version of gnocchis. They were filled with basil and mozzarella. To get ready to eat, toss them in a pan in a little butter and oil for 5 min.




To make the dish more versatile, chop two long Turkish green peppers. But pull out the seeds first. For more flavour,  add a spring onion. Give them and the gnocchis the 5 min in the pan.



When you use a pan that can go in the oven, just pour the nuked tomato sauce over and sprinkle the shredded cheese on top.



Season with pepper and bake in the oven for 12 min.

Ingredients:

1 package filled gnocchis, 1 tsp butter, 1 tsp oil

2 long thin green Turkish peppers, 1 spring onion

200 ml home made tomato sauce, grated mozzarella and cheddar cheese as much as you like

60 g shredded mozzarella and cheddar cheese, pepper
