I celebrate the Irish National Holiday for more years than I can count now. Each and every year I try to find something new to prepare.
Vegetables in cakes are nothing new to me. From carrots, zucchini, beets, parsnips to potatoes everything tastes good in a cake.
But broccoli? Never thought about using this in a cake. Since it is a savoury one, I gave it a try. It is a recipe from GuteKüche Austria.
The batter was very watery and contained no oil or butter. I was very skeptic when I poured it in the mould.
After 35 min at 180 C fan, I HAVE GOT A CAKE!
Recipe:
500 g broccoli with stem
4 large free range eggs
125 g sifted flour
1/2 tsp baking powder
125 ml whole milk
1 pinch salt, pepper, nutmeg
Butter and breadcrumbs for the bundt tin.
Clean the broccoli and put in in a strong blender with 4 eggs. Make a fine mix.
Pour it in a bowl and sift flour and baking powder on top. Add seasoning. Add milk.
Since this cake is for St.Patrick's Day I added a few drops of Pandan extract.
Bake it for 35 min, let it sit outside in the bundt tin for 6 min, then flip it out on a wire rack to cool or serve it warm with some sauce.
