Potato Stew might sound boring, but I can assure you it is not.
The potato chunks are cut like Goulash meat and treated like that. They go in the pot with the chopped onion first in oil to get some sear. After a couple of minutes tomato paste is added and cooked out too.
The veg stock gets in next. And now the first 10 minutes of covered cooking starts. There is time now to chop the other veggies and slice the two sausages for later.
After 10 min, add the seasoning and the cream, cook a little more and add the other veggies. When the potatoes are soft, add the sausages and warm them through. Check the seasoning and finish with parsley.
Ingredients:
600 g potatoes
1 red onion, 1 clove of garlic
3 tbsp grapeseed oil
2 tbsp tomato paste
350 ml veg stock from paste
200 ml double cream
1 large red bell pepper
1 bok choy
1tsp caraway seeds, 1 tsp paprika, 1 tsp Italian tomato seasoning, pepper, salt
Parsley
