YT Beryl Shereshewsky uploaded a video of Ramadan foods. This one is from Pakistan and I had to give it a try.
Chicken Aloo Kay Kebap.
It is basically dry mashed potatoes mixed with shredded cooked chicken and filled with shredded Mozzarella. Cheese pull, for sure.
I used my air fryer for my boneless chicken thights. The skin was eaten hot after they came out. But use cooked chicken breast or leftover meat from a Rotissery chicken.
But the potatoes needed to cook fresh and put hot through a potato ricer or mashed very fine. Then you mix in the chicken, juice of 1 lemon and salt and lots of pepper. I added some dried chives to specks of color. Some potato starch helps with the bind. I had a little chicken fat in the air fryer and added a tablespoon for flavour.
Put the worked together mixture in the fridge for 20 min. Use a serving spoon and flatten dough on your palm and put some Mozzarella inside. Close with a bit more dough and form kroketts.
Beaten egg and breadcrumbs later and shallow fried on both sides on medium high heat for 5 min.
I ate mine with some Okonomiyaki sauce.
Ingredients:
500 g potatoes
300 g chicken
1 lemon
2 tbsp potato starch
50 g Mozzarella shredded
Chives, salt, pepper
2 eggs
200 g breadcrumbs
Oil for shallow frying.
