Lemon Snack Cake

This is a recipe from "leckerschmecker", but they use zest and juice from regular lemons. I neded to do something useful with my punnet of TIKTOK Lemon Snacks. 



Eating them like Kumqats is a bit too tart for me. I have eaten 3 in total over 2 days and decided to use them for a recipe. Lemon cake sounded good, so here we are:



250 g flour + 2 tbsp for the 25 cm loaf tin + 1 tbsp butter

150 g sugar

1 tbsp vanilla sugar

3 medium free range eggs

150 g Greek yogurt

1 1/2 tsp baking powder

120 ml sunflower oil

4 lemon snacks

Topping:

100 g powdered sugar

1-2 lemon snack juiced



Preheat the oven 180 C.

Whisk sugars and eggs together, add yogurt and oil. Cut the lemon snack down in halves and take out the big piths. There are more in than you think. Put them in a mini chopper and mix them. Add to the egg mix.



Sift flour and baking powder together and fold it in with the liquids. Do not overmix.



Butter the loaf tin and use the flour to make it unstick for later. Fill in the batter and bake for 40 min. Take it out of the tin after 10 min and let it cool on a wire rack. 



Mix powdered sugar with lemon juice and top the cake with it.
