Fondue Chinoise

For a long evening is a Fondue a great way to pass the time. So many New Year Eves here in Germany see a Fondue this time.
It is a lot to prepare, but you can do most of the work during the afternoon.

recipe for the broth:
2 cubes of beef stock
1 tbsp white miso paste
1 package dashi stock
6 shitake mushrooms
100 g leek
1 garlic clove
1 knob of ginger
1 red chili
1 stalk lemon grass
2 tbsp mirin
2 tbsp soy sauce
2 tbsp sake

When the stock is done, use a strainer spoon and fish out all the veggies and spices.

ingredients for the fondue:
fine rice noodles cooked
3 mini ravioli per person cooked
pok choy
daikon raddish
fine strips of turkey breast precooked in the stock for 2 minutes
king prawns 2 per person precooked

Dipping sauce:
2 tbsp Japanese soy sauce
1 knob fresh ginger
1 clove garlic
