Fish Patties with Ayran and Horseradish Sauce

This is just the second time that I prepared some fish patties. The first time was with salmon and that went all wrong. In the meantime I bought frozen fish patties from the supermarket and was mostly dissapointed about the taste and the small amount of fish they contained.



This recipe is a keeper! When I am longing for some fish balls, I will use this way to prepare them. 



I got lucky at the supermarket. Pollock was at an offer this week and I bought 550 g of it. The amount of breadcrumbs as a binder is very low compared to the amount of fish. No wonder, that the ones from the frozen aile tasted not so good. Use a strong blender and make sure the fish and the other ingredients together do not get warm. If you only have a blender that does not have a lot of power, take a knife and chop the fish very fine.



Ingredients for 10 fish patties:

550 g pollock, 150 g Schmand or Smetana, 1 egg, 20 g chives and parsley, salt and pepper, zest of a lemon, 65 g breadcrumbs





Ayran Horseradish sauce:

150 ml Ayran (Turkish yogurt drink), 2 tbsp olive oil, 2 tsp horseradish, 3 stalks dill



When the fish mix is done. Take a large ice cream scoop and make the fish balls. Set them in some breadcrumbs to prevent sticking. Bake them in a large pan on each side 4-5 min.

I served it with pea mash.
