At the Butcher in the Eifel at the Nuerburgring I bought some smoked raw sausage and smoked raw ham. They are a speciality of this region.
A couple of potatoes, carrots, red peppers and onions were ready to go. I opened the freezer and looked for some peas. Instead I found pieces of uncooked pork skin and bone, ready to build the base of a soup. I also found a piece of very hard Parmesan with rind.
I took them out and put them frozen in boiling water and cooked them for 30 minutes, then discarded them. Some veg stock paste (homemade) for more flavour and the stock was ready to go.
I cut up sausage and ham, but started with cooking the veggies and the cheese first. After 15 minutes the protein went in. I gave them an other 10 minutes and finished with chives and parsley.
Ingredients:
700 ml stock of any kind
5 small potatoes, 1 large onion, 1 green onion, 4 garlic cloves, 1 fresh homegrown red chili, 2 carrots, 1 red bell pepper
Hard piece of Parmesan rind - call it UMAMI
1 smoked raw pork sausage, 80 g raw smoked ham
Dried parsley and chives
Salt and pepper
