One Pot Tomato Pasta

I have not much time today, because I am going on a weekend trip to France to drive on a racetrack.



Lots of washing, ironing, bed changing and so on, a one pot pasta dish sounds like a good idea.



Some of the ingredients needed to be used up before I leave. The one pot dish was the best chance to get it done.



Recipe for 1:

125 g Rigatoni al bronzo

3 green onion

2 garlic cloves

125 g tomatoes

1 tbsp tomato paste

1 tbsp olive oil

220 ml veg stock from paste

100 ml double cream

Fresh herbs including basil, chives, rosemary, thyme, lovage



Tomato seasoning, salt, pepper

Finish with 30 g Grana Padano.

Put everything except the cheese in a pot. Cover and bring to a boil, stir well, reduce the heat and cook until the pasta is done.

Finish with cheese.
