Caramel Layer Dessert with Strawberries

I saw something like this on a Reel on FB.



But different cookies and no fruits and just one layer. I knew that I can do a better job.



The German butter cookies from Leibniz are famous with their 56 teeth, but the price now got so high, that many look for Discounter brands. Two packs for the price of a single Leibniz one.



I found some punnet of fresh strawberries, very late in the season, but still good. They went on top of the bottom layer of cookies. 



Dr.Oetker products are famous for all kinds of desserts. Paradies cream is one of them. I choose the caramel one for this. 



Whipped cream mixed with the stiff beaten Paradies cream covered the strawberries. A second layer of cookies and the leftover cream on top. Some chocolate drops on top and in the fridge covered with klingfilm to set. That will take at least 3 hours.



Ingredients:

1 butter cookies pack

200 ml double cream

300 ml cold whole milk

1 Paradies cream caramel flavour

100 g strawberries

Chocolate drops

Chicken Döner Kebap

I bought a whole 1,4 kg cornfed chicken this morning.



My aim are a couple of recipes made out of this whole bird. To start the process, I layered a baking dish with carrots and placed the seasoned chicken on top, breastside up. 



The breast got some chunks of butter on top. The chicken went in the oven for 80 minutes at 180 C fan.



I bought some Pita bread singles, easy to warm up in the oven. Shredded some lettuce, picked some cherry tomatoes from my stack and got the last Ranch dressing out of the fridge. A single pickled large peperoni went last on the pile.

 


A chicken leg was then torn from the cooked bird and the meat shredded.

All placed on the pita bread and enjoyed with some Sumack seasoning.

Air Fryer Teriyaki Salmon

This is a very quick way to prepare a very tasty piece of fish.



The marinate is easy and it only takes 15 minutes to soak the salmon chunks. Do not let it sit too long in the marinate. The salmon gets too salty.



I put some backing paper in the air fryer basket to make the cleaning easier.



Place the chunks not over each other, just side by side. It takes 8 to 10 minutes at 200 C to cook them.



Sprinkle some sesame seeds and greens from a spring onion on top.



I used some microwave vegetable rice to serve with the salmon.



Ingredients:

350 g salmon steaks, take skin and bones off

3 tbsp teriyaki sauce

1 tbsp sesame oil

1 knob fresh ginger

3 garlic cloves

1 tsp gochugaru hot pepper flakes

Pepper

Sesame seeds, spring onion

Puff Pastry with Figs and Goatcheese

The second fig harvest season started last week. Now every 2 to 3 days I have to pluck some off the tree.



It is a recipe from cheflobster.com, but as most of the time I changed it a little.



I dried a batch already. This time they get together with strong red skinned goatcheese and some goat cream cheese.



The cheeses are mixed with honey, pepper and fresh thyme. The puff pastry squares are cut up short to the middle that will hold the filling.




Divide the cheese equally on the 6 squares. Cut the top off the fig and slice it, not too thick. Places the slices on top of the cheese and start pulling the sides up.



Brush with beaten egg and sprinkle with poppy seeds.



Bake at 200 C for 15 to 20 min.

Scrambled Eggs with Bloodpudding

So many people do not like bloodpudding. I do not know why, it is a very clean kind of sausage.



Many countries use all parts of the animals in their diet and using the fresh blood is one of them. I grew up with liver and blood sausage and I am a fan of it. 



My BFF knows a butcher that sells canned bloodsausages of very good taste. But her husband does not eat that and a large can is too much for a single person. She gave me half of it in a jar.



I wanted to eat it with good German bread and mustard, but that was way too much. That gave me the idea of scrambled eggs and sauteed bloodsausage. 



Just a bit of potato mash on the side and I was happy.



Recipe:

3 eggs, 2 tbsp milk, salt, pepper, butter

150 g canned bloodsausage 

1/2 onion

4 potatoes, 60 ml milk, 1 tbsp butter, salt, pepper, nutmeg

Start the potatoes first, they will take the longest time. Use a wide pan and melt the butter. Add the onions first to get them soft, then the bloodsausage. 

While it cooks, beat the eggs with milk and seasoning. Add to the pan snd scramble.

Mash the potatoes and add the other ingredients.

Bolognese Tex Mex with Ranch and Natchos

I have some Kids friendly Bolognese in my freezer and it was time to pull it out.



I had spaghetti two days ago in my Mississippi Chicken Spaghetti and was not keen to have pasta again.



But a bag of Cheese Nachos was sitting around and a quarter package of Ranch seasoning powder. Luckily all Ranch is gone now. It took me 3 years to get rid of 4 single packs in a box.

That clearly shows that Ranch dressing is not my favourite kind.




Adding a can of broad white beans and a can of sweetcorn transfered the bolo in the right ditection. The bolo was 50:50 meat and veggies, so no more veggies otherwise were added.

The kick came from Habanero Tabasco. A good couple of dashes later and the spice came through.



A tasty way to change from Italian food to American food.

Turkish Blueberry Jell-o with Peaches

A long while ago I discovered a Turkish supermarkt outside of the city. The one close by went out of business a year ago.



The blueberry jell-o from Kenton caught my eye and I bought a box. Today I was looking for a sweet treat where I could use up some ripe flat peaches.



Buying peaches in larger quantities is not a good idea, one day they are firm, the next day they are ripe. The day after that you need to eat or cook them definitely.

300 ml of boiling water mixed with the light blue powder, getting very blue in seconds.



I peeled 2 large peaches and chopped them and they went in the hot liquid. 30 min outside on the counter and the jell-o was solid. Now it rests in the fridge.
