A spicy weekend breakfast - vegetarian.
I had no Indian Chapaties. But 2 French Galettes. They needed to be eaten. I saw a video on Beryl Shereshewski's YT channel.
Stuffing them with an omelet filled with veggies and some hot chili sounded great. In Uganda this kind of street food is called a Rolex. Makes sense.
The omelett needed some tomatoes, onion, chili and a kind of cabbage. This bulks out the eggs and fills your stomach. I used what I had on hand.
Ingredients:
3 eggs, 2 tomatoes, 1 onion or 2 spring onion, 1 red chili,
1 head of romaine lettuce (no cabbage at home), vegetable oil, salt and pepper
1 round thin flathbread - the Galettes did the trick too.
Chop the veggies and beat the eggs. In a frying pan heat up the oil and cook the veggies until softened. Season. Pour the eggs over and let them set. Flip them over and cook the other side.
Warm the flatbread and place the omelet on top. Roll it up.
