Galettes Bretonnes are French comfort food. While I traveled along the coast of Brittany I came across many different versions. All of them good.
What was interesting were the stacks of ready made thin pancakes/galettes sold everywhere. It is a bit of a struggle to get the really thin ones baked at home. Most people buy them to fill them at home.
My grocery shopping trip to France allowed me to look for galettes. In Alsace ready made pieces of Flammkuche dough are everywhere. It took some time to find the Galettes. But I got lucky.
The basic filled Galette has ham, egg, cheese and often potato in it.
