After a long drive I decided to prepare the most easy pumpkin meal in a long time.
A hokkaido pumpkin has the speciality that the skin is edible. I washed the whole thing and put it in the oven at 180 C fan for 40 minutes.
I took it out of the oven on a cutting board and used a big Chef's knife to slice around the top to get the lid off. Pretty easy.
Use a tablespoon to get the seeds and the fibers out. Clean the seeds if you like to eat them or use them for salads.
I seasoned the pumpkin after I sprayed it with olive oil. I used Brushetta and Piri Piri seasining and salt and pepper.
Some slices on a plate and a Burrata on top. Cold and creamy cheese on warm spicy pumpkin. NICE.
