Kakis oven baked with Almond Butter Filling

After my trip with Hyundai Experience I went to the local large supermarket to buy my stuff for the weekend. I wanted to be done with it before hitting the Autobahn to drive home.



I love exploring supermarkets in different cities. They often sell local or regional products. 



In the fruit and veg isles I found a punnet of 8 kakis for a very reasonable price. They are getting in season in the moment.



But earing 8 fast ripening in a short amount of time was not my goal. I checked Pinterest for recipes and found a French website with different ways to use Kakis. 



Here is no.1, more to come as long as kaki are in season:

6 Kaki

50 g softened unsalted butter

50 g ground almonds

60 g icing sugar

1 tbsp brown rum

1 egg



Make the filling first. It needs to set in the fridge for minimum 30 min.



Use a smaller loaftin to set the Kakis in. Use a pairing knife and cut around the top of the fruit. 4 cm wide and 3 cm deep.

Preheat the oven 180 C fan.



Stuff the almond butter mix in the kakis. Set them in the loaftin. Bake for 40 min, then kill the energy and let the kakis sit for 30 min in the oven to cool down.

Serve slightly warm with a glass of wine.
