Every time I see fresh Okra somewhere I need to buy some. They are only sold in some International supermarkets. And it is always a surprise when I find some.
Yesterday I was in Frankfurt in a part of the city named Höchst. I had to park my car in a garage, because street parking was nearly impossible. I came out the exit and saw an Indian/Pakistani supermarket across the street.
On my way back from my apointment I went inside to check it out. The first thing I saw were huge crates with vegetables. The one with the Okras caught my eye first. I had to get some. Then spices, tea, yellow dhal, tamarind and hot and sweet sauce went in my shopping basket next.
I looked for recipes on Pinterest, found some I already cooked and used one by "Ester kocht". Made it my own way as usual.
Recipe for 2:
300 g okra
3 shallots, 3 garlic cloves, 1 knob of ginger
4 tiny chili
2 tbsp oil
100 g cherry tomatoes, 200 g tomato passata, 1 tsp tomato paste
300 ml veg stock from paste
Salt, pepper, 1/2 tsp thyme, nutmeg, smoked paprika, cumin, 1 bay leaf
Rice
Prepare the tomato sauce and let it cook 15 min to reduce. Cook the washed rice.
Top and tail the okras and cut them in 2 cm pieces. Add them after the 15 min to the sauce and cook 15 min more. Serve with rice.
