I have a good amount of seasoned oven baked pumpkin sitting outside in the cold on the balcony. Saves space in the fridge.
A batch of seasoned ground beef was cooked and divided for 2 dishes. The part that stayed in the pan got the chopped up pumpkin and later some Feta bits added.
For more liquid I used some Noilly Prat and some veg stock. Seasoned with herbes de Provence, smoked paprika and salt and pepper.
The pumpkin was already seasoned.
A very fast way to deal with leftover oven baked pumpkin. To bulk it out, serve it with some mashed potatoes for an additional side dish. I did not need to do that.
Ingredients:
200 g ground beef
1 tbsp olive oil
1 onion
3 garlic cloves
Herbes de Provence
Smoked paprika
Salt and pepper
450 g oven baked seasoned Hokkaido pumpkin
