I was invited to an Autumn lunch at my friends house. The tomato season is going to its end and other ingredients are getting more and more into the focus.
In other countries they celebrate the beginning of Autumn with a vengeance. Not only Halloween fashioned goods are everywhere, but ingredients like pumpkins, walnuts or chestnuts are more used in dishes.
We had as an amuse bouche a little onion and cheese tarte with fresh fig and caramelised walnuts. That was served with a glass of pink champagne.
My friends and I all love to watch cooking shows and we´ve seen some of the same kind. But what came next, was showcased in a cooking show where professional chefs cooked for each other. This one show I did not see and I was very surprised when the starter came.
My friends husband is well known for his handy craft work and when she is coming up with crazy ideas, he is the one to be asked to make them happen. And he does excellent work.
Sausage on a clothes line with cloth picks. Small individual plates with a wire between to pillars of wood. Such a cool thing to do. We had the sausage slices with bread, butter, mustard, quail egg and gherkins.
The main course was a speciality from the Palatine. Saumagen. I wrote about it in a former blog. This time they made it themselves and cooked it Sous Vide for 2 hours at 85 C. Then it was cooled completely and later cut into slices and baked in a little veg oil.
Served with Sauerkraut and chestnut and potato mash.
The last tomatoes made an appearance in the dessert.
A tomato cheesecake, a little sweet filled with a tomato jam. A mild herb sauce with little mozzarella balls filled with tomato chutney. And last on the etagére came a crust filled with hard cheese topped with tomato jelly.
During the time we were eating, we planned a lunch for next Saturday already and divided the chores.
A nice half day spending time in the kitchen with friends is something I really look forward to.
