Or one step of many to create a quirky soup.
I watched the German version of "Come dine with me" Master round and someone served a soup in a goldfish bowl. That had a lot of different parts to be stacked up on each other.
One part was the pea pannacotta.
I love sweet pannacotta, so why not a savoury one.
Recipe for 7 mini muffin tins
200 defrosted peas
50 g onion
2 gelatine leaves
2 tbsp butter
3 tbsp white wine
5 tbsp double cream
1 vanilla pod
Salt and pepper
Saute the chopped onions on butter until tender.
Add wine, double cream and peas and season with vanilla, salt and pepper.
Soak the gelatine leaves for 5 min and squeeze out the water.
Take a stickblender to the peas and make them into a fine paste. Add the gelatine and dissolve it.
Spray the muffin tins and fill in the pannacotta.
Put in the fridge for minimum 5 hours.
The faint vanilla tastes is amazing with the strong pea flavour.
