Juicy and a bit tart - goes great with smokey bacon. What is not to like?
A creamy easy spaghetti sauce brings everything together. I found the recipe in one of our Discounter magazines. When you look for a inexpensive dinner for 4 and buy at the Discounter, this dish costs about €5 for 4 people.
I reduced the amount of ingredients for 2 people. I want to eat the leftovers at the office for lunch.
Recipe:
180 g spaghetti, 150 g rhubarb, 2 tsp sugar
50 g cream cheese, 75 ml double cream
80 g smokey bacon, parsley
Salt. Pepper, Piment d'Espelette
Pasta cooking water
Cut the rhubarb in 1,5 cm cubes. In 60 ml water with sugar cook the rhubarb for 5 min
Drain. In a pan in a little oil brown the bacon. Take it out and drain the grease.
In a bowl mix cream cheese, double cream and 60 ml pasta water. Season and pour in the pan. Heat up and add bacon and rhubarb. Mix well, toss the spaghetti in and stir until all is combined. Finish with parsley.
