Chicken Legs on mixed Peppers

A stress free way to get a great dish.


Not much work to do and a clean stove top. The oven is doing most of the work.



Just season the chicken pieces with what ever kind of rub you like. LIDL had some spice jars with Jerk rub or Cajun rub. I bought both and used the Cajun one.



Get the seeds out of the bell peppers and cut them only in 4 or 5 pieces. I had a bag of Padron peppers from Spain and a red chili only cut the stem off. Some rosemary, thyme and 100 ml of veg stock with 2 tsp of Ayvar as a sauce.



Some spring onion and a couple of garlic cloves for taste. Grind black pepper and a bit of herb salt over everything and chuck it in the oven.



Bake at 200C for 45 min, turn the chicken legs after 25 min.

Ingredients:

2 chicken legs, seasoning rub

2 red bell peppers, 200 g Padron peppers

2 spring onions. 4 garlic cloves, rosemary, thyme

100 ml veg stock, 2 tsp Ayvar, salt and pepper
