Persimmon Mozzarella and Croutons

Caprese - no way!



Sweet persimmons with garlic roasted bread and shredded buffalo mozz, what is not to like. Go outside and harvest the last mint leaves and other herbs still kicking and add them to the plate.



A dressing with olio con lemon, balsamic vinegar and cream, lemon pepper and Fleur de sel.
Use the bread chunks and soak up the dressing. Get all three ingredients together in one bite. Awesome.

2 persimmons,  mint, basil, garlic
1 large thick slice of bread, butter, oil
125 g Mozzarella de Buffola
Basamic vinegar, balsamic cream, olio con lemon, fleur de sel, lemon pepper
