Kaki Bread

This is a sweet treat like a Banana bread.



Kakis or Persimmons are in season now. But this year buying single fruits is a lot more expensive then last year. Two years ago for a single one you paid 39 cents, now 79 cents. But a bag with 6 fruits is sometimes on sale. I picked one up.



This recipe asks for the harder kind of fruit. It is grated. And not peeled.



Recipe:

2 cups grated hard kaki with peel (2-3 kaki)

2 large free range eggs, 3/4 cup sugar

1 1/2 cup flour, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt

1 tsp vanilla extract, 1/2 tsp ground coriander seeds

1/2 cup melted cooled coconut oil, 1/2 cup Greek yogurt 10% fat

Take off the top of the washed kaki. Either take a box grater and grate it or use a mini chopper. Set aside.



Preheat the oven 175 C.

Melt the coconut oil in the microwave and let it cool down a bit.



Beat sugar and eggs with a hand mixer for 3 min, add the coconut oil and mix 1 min more. Add the vanilla extract.

Sift all dry ingredients together. Use a spatula and fold one part of the flour in to tge egg mix. Then the second part. Add the coriander spice.


Now in with the grated kaki and the yogurt. 

Use a 9x5 inch loaf tin and dress it with paper. Fill in the batter and bake for 45 to 50 min.

Take it out of the loaf tin after it cooled for 10 min and place it on a wire rack. Peel off the paper.
