Sweet Corn & Cheese Fritters

The base of the recipe is from a site for parents with young children. Food was one of the topics.
The original recipe is recommened for little kids starting between 10 to 12 month. Not much seasoning or strong cheese. They use young Gouda.


Why not try a recipe like that. When you see recipes of American corn fritters, they are pretty basic too.


I used this recipe to get some of my leftover cheeses out of the fridge. I had some Peccorino, Taleggio and Swiss Mountain Cheese. And I used some kinds of seasoning.


recipe of four:
1 large free range egg
200 ml whole milk
100 g flour
1/2 tsp baking powder
85 g sweet corn out of a can
5 tbsp mixed grated cheeses
1 1/2 tsp chives
pinch of sea salt
1/2 tsp smoked paprika
1/2 tsp of piment d´Espelette
white pepper
oil


Mix egg andd milk, add flour and baking powder. Stir well.
Add sweet corn, chives and cheese.
Season to taste.




Heat up oil in a pan and spoon some mixture in. Bake on both sides on medium high heat for 2 min or until golden brown. Drain on kitchen paper.
Serve with some sweet corn kernels.
