Cauliflower Balls with Ayvar Dip

Cauliflower, Bread and Feta are the main ingredients of these balls. It is a vegetarian dish. I prepared them in the Air Fryer.



The cauliflower is the first wet element in this dish. It is cooked and mashed and with egg and feta added to the dry ingredients. Use a dip to freshen the palate. These balls can be served with a salad as well. Or if you like with a piece of meat.



Recipe for 16 balls:

280 g cauliflower, 1 spring onion, 1 clove of garlic

100 g day old bread, 30 g bread crumbs, 1 egg, 50 g feta

1/4 bunch parsley, 2 tsp curry powder, pinch nutmeg, 1/4 tsp cayenne pepper

Salt and pepper, oil in a sprayer.



Cook the cauliflower in salted water until soft, drain and mash and cool down.



Pur the bread into a blender and make a fine crumb. Pour in a bowl. Chop onion and garlic and add it to the bread. Crumble the feta and toss that with the egg into the bowl. Add the mashed cauliflower and parsley, sesaon well. Better overseason. 

Mash all together into a compact dough and let it sit for 30 min.



Use a medium ice cream scoop and form balls. Now either put them in your air fryer with some oil spray on top or fry them in a pan.

Air fryer 180 C 12 min.



Dip:

2 tbsp curd, 2 tbsp ayvar, 2 tbsp smietana, 1 tsp chives, salt and pepper, 1/2 tsp pul biber
