The head of cauliflower was huge. 2/3rd of it are now used. The rest is back in the veggie drawer to wait for a new purpose.
I found a red bell pepper in the fridge. I had overlooked it last week. But still in edible shape. Black Forest Ham and some spring onions added flavour to the bake.
Irish Ceddar was my choice of cheese for this bake.
I did only cook the veggies in the microwave. The cauliflower florets needed 6 min on 800 watts, the potato slices needed 4 min and pepper and onions were 3 min in.
Ingredients:
450 g cauliflower, 240 g potato, 1 red bell pepper, 1 spring onion
1 tbsp butter for the baking dish, 60 g Black Forest Ham, 150 ml veg stock, 100 ml sour cream, salt and pepper, smoked paprika, cayenne, nutmeg, 100 g Cheddar
Heat up the oven to 170C fan.
Stick all veggies and ham with seasoning in the baking dish, mix stock with cream and a bit of the grated cheese. Pour over, and sprinkle the cheese on top.
Bake for 35 min and let rest out of the oven for 10 min before serving.
