I am a huge fan of regular potato pancakes, or latkes or hash browns or roesti.
Having some sweet potatoes at home, I thought about to try them as sweet potato pancakes.
But here comes the difference. Sweet potatoes do not have the amount of starch the others have. Getting them to stick together is only possible with adding some starch or flour to them.
They are really sweet and need a good amount of seasoning to balance that.
Recipe for 8 pancakes:
500 g grated sweet potato
1 grated small red onion
3 tbsp potato starch, 1 egg, dried onion and garlic powder, salt and pepper
Oil for the pan, a good amount. I ate them with apple sauce.
Grate sweet potato and onion, add starch and seasoning and crack an egg in. Stir well and let it sit for 15 min to get some moisture
Use a medium hot pan with 4 tbsp of oil. Set 4 spoons of batter in and press down. They will take about 5 min on each side or until they take a good color.
