A zested and juiced lemon added to fragrant Jasmine rice is something special. It is a greeting from the Mediterranean coast of Greece.
Think about a piece of grilled fish or some grilled veggies on an a huge plate under an umbrella outdoors at the Greek seaside. This is your personal escape without setting a foot in an airplane.
Today I just wanted some of the rice on its own to enjoy. The leftovers will be served with some chicken recipe.
I just added a couple tablespoons of rich Greek yogurt with a bit of lemon balm.
