This is a recipe from Maltes Kitchen that I found on Pinterest. The Kritharaki Pasta was from my LIDL Greek food haul 2 weeks ago. The bottle of Retzina wine too.
This one pot dish is easy to prepare. There are just a couple of things to look out for. Do not burn the paprika seasoning on the chicken and buy a jar of Kalamata olives without stones in it. Otherwise the recipe is smooth sailing.
When the prep work is done, the oven does the cooking. Just wait and eat.
Preheat the oven 180 C.
Recipe for 2:
500 g chicken thighs boneless
Salt, pepper, paprika, oilve oil
500 ml chicken stock, small can of tomatoes
250 g Kritharaki pasta
1 medium yellow onion, 1 garlic clove
1 bay leave, parsley, thyme
Brush the chicken with olive oil and season with salt, pepper and paprika. Use a pan that is oven safe and brown the chicken on both sides. Just use medium high heat, otherwise the paprika will burn. Get the chicken out and put in the onion and garlic. Give it 3 min, then add the pasta and coat it in oil for 1 min.
Now tomatoes and chicken stock next. Then the olives, thyme and bay leaf. The chicken pieces are sittting in next.
Put in the oven for 30 min
