Feta from Bulgaria was calling for a recipe. I found Baniza.
That is puff pastry filled with feta, leek, egg and some seasoning. But I wanted a little meat in my Baniza. A couple of thin slices of smoked raw ham were added.
Not much work to do. The time the oven needs to preheat is the time to finish the prep work.
Preheat the oven 200 C fan.
Roll out the puff pastry. Place a thin layer of raw ham on one side. Use a small bowl and crumble the feta in it. Chop leek and the green part of two spring onions and add that. Break an egg in and season well with pepper. Mix with a fork.
Spread on the one side on top of the raw ham. Fold the other side over and crimp the outside together. Poke some holes in the top. Brush with egg.
Bake for 15 min.

1 round puff pastry
2 eggs
80 g Bulgarian Feta
50 g leek
Green from 2 spring onions
4 slices smoked raw ham
Pepper
