One pan and an oven proof dish, not so many things to clean later.
The Maultaschen are a ready made Swabian product, that is available with different fillings and in different qualities in most supermarkets. I used the premium ones with veal and vegetable filling.
A combination of fresh tomatoes and homemade tomato sauce, chopped green onions and some garlic is the other part of this dish.
Cheeses on top and a 15 minute bake in the oven and you are ready to eat.
Ingredients:
340 g Maultaschen or filled pasta
2 green onions, 3 garlic cloves
2 tbsp oil, 1 tbsp butter
1 tbsp tomato paste
150 ml double cream
200 ml tomato sauce
200 g cherry tomatoes
1 tsp sugar
60 g Emmenthal cheese, 30 g Parmesan
Salt, pepper, smoked paprika, herbes de Provence
Cut the filled pasta in 8 pieces and melt butter and 1 tbsp oil in a pan. Sauté for 5 min. Put in a baking dish.
Add the second tbsp oil to the pan and put the chopped green onions in. Give them 3 min then add tomato paste. Cook for 1. Toss in quartered tomatoes and give them 2 min. Now add your tomato sauce and the double cream. Season well and cook for 5 min.
Pour over the pasta and finish with a layer of Emmenthal and Parmesan.
