Served with oven baked potato slices and Feta.
When you like to eat it vegan, then just left out the Feta. But I wanted some cheese with my vegetables.
First step are the potatoes. Peel them and slice in 5 mm discs. Put in water for 10 min, then drain and dry.
Use olive oil, Provence salt, pepper and herbes de Provence and toss the potatoes in. Preheat the oven 180 C fan.
On baking paper put the single slices and bake them 30 min, turning them after 20 min.
This recipe is not much work. Just steam the broccoli for 10 minutes, it keeps the green color this way. Some green onions and lots of young garlic sauteed in olive oil.
Then the broccoli goes in and gets tossed. A half jar of Ayvar and a bit of water, some salt and pepper and 5 minutes to finish.
Break some Feta chunks off and add them on top of the broccoli. Serve with the potatoes.
Ingredients for 1:
250 g broccoli steamed
5 smaller potatoes
Olive oil
1/2 jar Ayvar + 100 ml water
Provence salt, pepper , herbes de Provence
2 green onions
5 young garlic cloves
80 g Feta
