Left over mashed potatoes can find a way in many different dishes. Too good to go to waste.
I looked for an other way yesterday and took an ice cream scoop and put balls of mash on baking paper and pressed them a bit flat.
Olive oil sprayed on top and then lots of seasonings. The more, the better.
Then it goes in the oven at 180 C fan for 30 min.
I topped some of the patties with Greek yogurt and later had some with my Hong Kong style pork neck steak and garlic Swiss chard.
A great way to use up leftover potato mash.
