At the Turkish supermarket I bought a garlic sausage at the butcher there. But the taste was less garlicky but more cumin.
The heavy dose of cumin had me thinking of sucuk sausage immediately. Now I wanted to try it with pasta.
I did use some fast thin spaghetti as the pasta, but any other kind will work too.
Just a little bit of red pesto mixed in with the pasta water and a small amount of brine from the black olives made the right sauce. The cumin from the sucuk stayed dominant though.
Ingredients:
100 g pasta
1 tsp olive oil
60 g sucuk or Turkish garlic sausage
2 tsp red pesto
40 g black olives
1 tsp olive brine
Sautée the sausage in oil until some of the fat has come out. Add some pasta water and red pesto, black olives and toss in the pasta.
