A one pot dish!
The preptime is short, the cooking time is less then 25 min. Good for a midweek meal.
Peppers retain their crunch when only cooked short. They have a lovely color and brighten every dish. Leftovers are great the next two days, but they freezes well to.
Sausage meat is seasoned pork meat. That is a fast way to have a protein in the dish without lots of hassle. Just cut it in nice chunks.
Recipe for 2:
200 g sausage meat, 1/3 cup Basmati rice, 1 cup hot veg stock
2 colorful bell peppers, 3 spring onions, 3 cloves of garlic
1 tbsp olive oil, 2 tbsp tomato paste, salt and pepper
1/2 tsp paprika, 1 tsp smoked paprika, 1/2 tsp cayenne, 1 tsp herbes de Provence, parsley
Use a pan with a lid. Heat up the oil and start with the sausages. After 3 min, add tomato paste, stir well. Now in with the veggies. Season with dalt and pepper. After 2 min add the washed Basmati. Stir well.
Add the stock and seasoning. Reduce the heat and close the lid. Cook on low for 12 min. Add parsley.
