An open half eaten small and stale bag of Tortilla chips needed a new place to shine.
Outside the waste basket.
I found an idea about a Mexican soup using fresh fried day old soft tortillas. Sopa de Tortilla. I did not read the recipe, just saw the picture of the soup.
I had a red bell pepper, a bunch of spring onions and 2 hands full of cherry tomatoes. In the fridge was a jar of home made chicken stock from last week and some wilting parsley.
2 avocados were sitting to ripen on the kitchen counter.
Ingredients:
125 g cherry tomatoes, 1 red bell pepper, 1 bunch spring onions, 1 tbsp olive oil
Salt, pepper, smoked paprika, chili
3 tbsp parsley, 1/2 bag tortilla chips, 2 avos
Cut up the veggies and toss them in oil. Give them 5 min. Add the seasoning and the chicken stock. Cook fir 10 more min. Take a stick blender anf mix some of the veggies. Check the seasoning. Crumble Tortilla chips in a bowl and add avo pieces. Pour in the soup and finish with parsley
