Meat, veggies and fruits get more expensive every week. Getting something on sale during a week is great to keep your grocery budget down.
Checking the ads of the supermarkets and cooking what is offered, is a good way to save money. Just cook what is inexpensive and wait for other offers. Your favourite recipes might take a while longer to be made.
Today sliced beef shanks were on sale. 50 % off the regular price. Normally I would make beef soup with pasta. But I wanted something else. After a short 20 min preparation time, the pot went in the oven for 3,5 hours.
Serve it with bread or pasta.
Recipe for 2:
2 slices of beef shanks, 2 tbsp olive oil
Salt, pepper, flour
1 onion, 4 garlic cloves, 2 tbsp tomato paste
1 carrot, 40 g celeriac, 40 g leek
200 g canned crushed tomatoes, 100 ml red or rose wine, 400 ml beef stock
5 juiniper berries, 4 allspice berries
Preheat the oven 140 C.
Pat the beef dry, season and cover with flour. In an oven proof skillet heat up 1 tbsp oil abd sear the meat from both sides. Take them out.
Add 1 tbsp oil, chopped onion and garlic and give them 3 min. Add tomato paste. Cook for 3 min. Add the chopped vegetables.
Now add all liquids and the canned tomatoes. Toss is the berries and place the beef on top. Bring to a boil, close the lid and chuck in the oven.
After 3,5 hours make a Gremolata with garlic parsley and lemon zest and top the beef with it. But that is totally optional.
