I haven't had one on a long time.
This piece of pork is not always sold in supermarkets. It is easier to get them in Bavaria. But I got lucky and bought one.
The pork is cured in salt and then smoked. To prepare it, it has to be cooked for a while.
In Bavaria the side dishes are mostly potato dumplings and sauerkraut or res cabbage. I went for lambs lettuce as a light side dish.
The pork knuckle needs 70 min per kilo cooking time. The one I've bought was a little heavier and needed 85 min.
Just cover it with enough water in a huge pot and simmer it the whole time. No rolling boil, please.
Take it out and cut off the skin anf take off the fat. Serve the meat with some mustard.
