A creative way to prevent food waste.
A saw a reel on Insta and the idea stuck. A couple of days old lambs lettuce and leftover rice sitting in the fridge. The salad was still in good condition, I cleaned out the bruised leaves and gave it a couple of minutes in cold water.
From my Osso Buco from yesterday a lot of the Gremolata was in a bowl. The girl in the reel used parsley and kale as the green part. That sounded a little too bland for me. The garlic lemon and parsley mix brightened up the flavour profile.
From my Advent calender I had today a small jar of Italian herb salt and still 1 tbsp of the olive oil with orange left.
Recipe for 1:
1,5 cup cold cooked rice
2 tbsp chopped parsley, 1/2 garlic clove, zest of 1/2 lemon
60 g lambs lettuce
1 tsp Trader Joe's All about Bagle seasoning, 1/4 tsp Italian herb salt, 1 tbsp olive oil with orange, 1 tbsp apple cider vinegar
Heat up the oven to 220 C.
Put all ingredients in a strong blender and give it a good mix. Use a baking paper and spray it with a little oil. With an ice cream scoop dole out 6 balls and place them on the tray.
Bake for 20 min. Eat them with some Mango Chutney.
