I did some rice cooker veggie rice two days ago. There were leftovers. I often eat this for breakfast heated up in the microwave with a fried egg on top. But I wanted something else this time.
Cold Basmati gets very loose in a pan when it is stirred in some oil. Some green onion and tomatoes were in the cold rice and some veg stock.
It takes some time until the rice done. I've beaten 2 eggs and seasoned them. A little shuffle to get the rice away from the middle.
A dash of sesame oil and the beaten egg on top. It takes a little stirring until the eggs settle. Then mix it in with the rice.
A shot of dark soy sauce and the rice is done.
Ingredients:
Cold vegetable rice
2 tbsp grapeseed oil
2 eggs
Salt and pepper
1 tsp toasted sesame oil
1 tbsp dark soy sauce
