Kohlrabi Feta Salad

An other one of my homegrown kohlrabi was ready to be harvested.



For tonights bread and butter dinner, a fresh kind of salad sounded good. With feta cheese. That brings protein, creaminess and a bit of Greek atmosphere to the table.



Just some roasted pine nuts and lemon juice and lemon olive oil to set the stage. To balance out the sourness, a touch of agave syrup is fine. 



Add some parsley to finish and the salad is ready to eat.

Ingredients for 1 :

1 medium kohlrabi

20 g pine nuts

Parsley

30 g feta cheese

2 tbsp olive oil lemon

1/2 lemon juiced

1 tsp agave syrup

Salt and pepper 



Peel the kohlrabi and cut it in thin slices. Toast the pine nuts. Squeeze lemon juice and mix it with olive oil lemon, sslt, pepper and agave syrup. Chop parsley and cut up the feta.
