This is a vegetarian dish easy to prepare when you work from home. Using the Thermomix makes it even easier. No need to stir, no burning at the bottom of the pot.
I peeled and cut the veggies early in the morning before I started my workday.
I hate mushy vegetables. Cutting them about 1 inch thickness helped to retain their structure. And the blades of the Thermomix on left turn and only stir function helped too.
Ingredients:
400 g kohlrabi, 400 g potato, 2 shallots
1 garlic clove, 100 ml veg stock, 50 ml double cream, 125 g velveeta with caraway seeds, salt, pepper, nutmeg, 30 g butter
Fresh borage leaves and blue flowers
Put shallots and garlic in the thermomix, 3 sec speed 6, scrape them down. Add butter. Varoma, 3 min, speed 2.
Add liquid and veggies, season with salt and pepper. Varoma, 10 min, left turn, spoon speed. With the stopper in.
Add cheese. 90C, 10 min, left turn, spoon speed.
Add nutmeg and check seasoning. Chop the borage leaves and stir them in. Decorate with flowers.
