I found the idea in a health magazine. The combination was different and it was for 4 people. The first thing that popped up was the amount of bacon used for that salad. A total of 15 g - less than 4 g per person? I made myself a salad as a main course and used a bit more bacon :-)
I choose walnuts for the crunch.
I am a huge fan of salads that have some fruits in them. The combination of sweet and savoury is great. A good dressing balances everything out. Finally it is getting summer over here. Now is a good time to choose this kind of meals.
Recipe for 1:
175 g papaya, 80 g baby spinach, 80 g mozzarella
1 hand full of walnuts, 4 slices bacon, 1 spring onion
monks cress leaves and flowers, sorrel, salt and pepper, 2 tbsp olive oil, 1 tbsp white balsamic vinegar
In a small pan fry the bacon strips, toast the walnuts in the bacon grease. Rip the bacon apart.
Wash and shred the spinach, chop the onion and peel and deseed the papaya. Cut it in bite size chunks.
Drain the mozzarella and make the dressing. Wash the herbs. Bring everything together on a plate and make it look nice.
