Kohlrabi Fries

A nice alternative to French fries. And a healthier one.



Vegetable fries are often soggy or need a heavy coating of flour or starch.

These fries are not so crisp, but it works fine for me. 



It is important to get the kohlrabi sticks very dry. Rub them with paper towels or use a cloth to get most of the moisture off. Season a bit of oil. Do not make them too oily. Less is more here. 



I made a simple dip with creme fraiche, curry ketchup and dried salad herbs and a few tiny Greek basil lleaves



Heat up the oven to 230 C fan. Use baking paper and spread the kohlrabi sticks out. They should not touch each other.

Bake for 20 to 30 min depending on the size of the sticks. Turn after 15 min.



400 g kohlrabi, 2 tbsp rapeseed oil, smoked paprika, cayenne, a little salt, pepper, herbes de Provence.

Season with salt when the sticks come out of the oven.
