Pangasius with Burrata and Tomatoes

The pangasius is not my favourite kind of fish. But this one was from good quality.



Usually this type of fish is great for people who do not like the taste of fish. Sometimes pieces battered and fried reminded me of kitchen paper in a batter. 



I still have a big bowl of my own tomatoes. I pulled them off the vine still green and had them sitting on a red paper napkin with an apple and covered with an other red napkin on the counter. Now after 4 weeks 75 % were red. The other 25 % went in the organic waste bin.



One burrata was left over from the pancake recipe. It went well with the pangasius.

Ingredients:

1 tsp oil

300 g pangasius + fish seasoning

100 g cherry tomatoes

100 g Burrata

Parsley or any other fresh herb

Smoked salt, pepper

Preheat the oven 160 C fan. 



Season the fish and brush the oven proof dish with oil. Put the fish in. Cut the tomatoes through the middle and place them on the fish. Add herbs and chunks of Burrata. Season with salt and pepper. Bake for 25 min.

Serve with rice and use the fish juice in the pan on the rice.
