Halloween is today and the house across the street is doing a little celebration outside on the sidewalk. I have enough decorations for many parties, so I was appointed Deco queen for the day.
But food is an essencial part of a good Hounted Sidewalk Party. I needed to come up with something. A potato salad and some ripped off fingers sounded good. A vanilla pudding with eyes staring out of it, was good too.
It was not too cold and only rained a tiny bit until late in the evening, beeing outside for so many hours wad fun.
Recipe for 6 to 8:
1,5 kg salad potatoes, cooked and peeled the day before
3 medium red onions, 80 g bacon bits smoked
3 purple carrots, grated
3 cooked red beets, grated
Oil, cider vinegar, 3 tsp whole grain mustard, 2 tsp garlic paste, 150 ml chicken stock
3 tsp dried organic red beet powder
Salt and pepper
Start the bacon in a little oil. When it took color, add the onions and let them get soft. Pour in the stock and the vinegar. Salt and pepper and mustard is the next. Taste it and if needed add more seasoning or vinegar. Pour warm over the other ingredients and stir well.
