My two sage plants on the balcony are still going strong. A couple of leaves for some tasty food they can spare.
I bought an ultra thin long strip of veal at the butcher today. A very costly piece of meat. That needed to be cooked with care. The Italian Deli store, I visited on Saturday, had some San Daniele ham. The very salty and dry ham is great to go with veal.
Not much to do. Just cut up the long strip of veal and season it on both sides with salt and pepper. Now some strips of procchiuto on top and some sage leaves. Fold one half over and secure with a toothpick.
I ate it with some rice. I waited ubtil the rice was fully cooked to start the pan. These saltimbocca do not need a lot of time in the pan. They are ready in 3 min. Just high heat and a little oil, flip them after 45 sec and then drop a good amount of butter in the pan together with some sage leaves. Spoon the butter over the meat constantly and finish it.
Pour the sage butter over the rice and eat with some lettuce.
