The zucchini season has finally started in my large pot behind the house.
I choose a yellow kind. They are not so easily found in supermarkets and are a lot more expensive then the green kind.
New ways to eat that veg are always welcome. This is a recipe idea from "fitgemixt". A recipe made for the Thermomix. But can be done with a strong blender too.
I choose a veriaty of seasoning, because reading the recipe, it felt bland to me. I love my food with a good amount of taste.
75 cal for a small piece is a good deal. I took 10 pieces out of it.
Ingredients:
350 g yellow zucchini
400 g potatoes
2 tbsp parsley leaves
90 g Parmesan cheese
Olive oil spray
Salt, pepper, nutmeg, Baharat seasoning, majoram
Chop the zucchini roughly and put it in a blender - thermomix 10 sec, speed 10. Pour it in a fine mash sieve over a bowl and let the juices run out.
Clean and dry the thermomix. Put the Parmesan in and at 6 sec, speed 5 grate it. Take a quarter of it out for later.
Peel the potatoes and throw chunks on top of the cheese in the thermomix. Add the parsley. 6 sec, speed 5 . Add the drained zucchini and all spices. Mix again 4 sec, speed 5.
Use baking paper and spread it out with a spatula to an even layer. Spray olive oil on top and the Parmesan.
Preheat the oven 200 C, bake for 30 min.
