Courgette Beef Mince and Feta Sauce

A large pan of a great sauce to eat with rice or pasta or fries, or even with Baguette.



It is a quick meal in less than 30 minutes. You can switch veggies when you don't like some of them or do not have them at home.



The only hassle is the cleaning and chopping of the veggies. But that can be done while the beef mince is browning in the pan.



Beef mince - well. I bought beef mince with the green label  "BIO" as in organic. With just a teaspoon full of oil I started to cook it in the pan. The moment it changed colour, it started to loose water. There was a lot of water in the pan. I took the beef mince out of the fridge for 45 min to get up to room temperature. 

Did they slaughter a cow or a water buffalo? With beef mince about 27% of water content are tolerable, but that flood was way too much. I cranked up the heat to high to cook out some of the water.

Ingredients:

400 g beef mince, 1 tsp olive oil, 1 red onion, 3 spring onions, 3 cloves of garlic

1 medium courgette, 1 orange bell pepper, 4 small tomatoes, 200 g sheep milk feta

Salt, pepper, herbes de Provence, chili, smoked paprika, 2 tbsp tomato paste

2 tbsp Noilly Prat



After the meat has browned, add the tomato paste and all the chopped veggies. Givevthem a good stir and season well. Add the Noilly Prat, close the lid and cook for 12 min. Stirvagain and set the slices of feta on top. Close the lid again and cook for 5 min. Stir well and serve.
